The Locals: Heather and Alastair

Meet karaoke queen Heather and metal head Alastair, the dynamic duo behind new Britomart cocktail bar Caretaker.

Heather Garland

What do you do? I am a cocktail bartender and part owner of Caretaker.

What song do you know all the lyrics to? Quite a few actually, I managed a bar for 3 years where the only place open for after work drinks was the Karaoke bar next door.

If you could give your 13-year-old self a piece of advice, what would it be? Not to take things so seriously.

How do you procrastinate? Always cocktails. When drinking cocktails counts as work it makes for a very enjoyable distraction.

If you were on death row, what would your last meal be?  I’d go to a Scarf dinner in Melbourne. Something to make me feel good about the world. Scarf is a program which helps young people from asylum seeker, refugee and migrant backgrounds by teaching them the skills they need to find employment in hospitality, it’s hosted by a different restaurant every season. The idea is that hospitality can change lives, something I very much believe in. The trainees make your drinks and serve your table and the food is always awesome. It’s become a real foodie thing to do.

Which Spice Girl are you? None of them, I hope. I always related more to the artists of the 60’s and 70’s. They had more to say.

Favourite Britomart spot? That’s a hard choice. I am a big fan of Ebisu and Oaken.

In 10 years you’ll find me: Behind a bar or sitting at a bar cocktail in hand. I love this industry. Hospo for life.

Alastair Walker

What do you do? I am a cocktail bartender and part owner of Caretaker.

What song do you know all the lyrics to? Enter Sandman by Metallica.

If you could give your 13-year-old self a piece of advice, what would it be? Pay attention in Geography – booze comes from all round the world, it helps to know where these countries are.

How do you procrastinate? I eat.

If you were on death row, what would your last meal be? An excessively large steak.

Which Spice Girl are you? Before I eat – Scary, after – the blond one.

Favourite Britomart spot? REC – I’m a pool shark(that’s a lie, I’m terrible (or am I?))

In 10 years you’ll find me… With a pot belly watching Metallica on their ‘we’re still alive’ tour.
