Hainanese chicken rice.

Right hand.

What’s the best part of your job?
The cooking has always been the best part, it is why I got into the industry in the first place, and the eating.

Where did you train?
I trained at Waikato Polytechnic in Hamilton which is now Wintec, it gave me a great foundation to start my career.

What’s a good road trip song?
Thunder Road by Bruce Springsteen.

What was the first thing you can remember mastering in the kitchen?
Butchering a chicken and making a decent stock out of it.

If it was your last weekend on earth, what city would you eat in?
Los Angeles, there are quite a few restaurants I love and California has the best produce around.

Did you eat your veges as a kid?
Of course.
