Where are you from? Originally from Brittany in France, I also spent 8 years in Prague before coming to New Zealand three years ago.

How long have you been at Ortolana? Since day one in February 2013.

What’s your favourite dish on the menu right now? Hmm… tough one. I would say the organic chicken cotoletta with a gypsy salad is still my favourite dinner option.

Why did you get into the restaurant world? I got really tired of sitting in front of a computer screen! I like being in movement, hosting a crowd, I always feel like I’ve accomplished more at the end of the day.

What has been your worst hospo moment? Breaking a plate onto a full glass of red wine. It broke and fell on the customer’s white pants who then tried to help me out and cut himself. A nightmare!

What food do you detest? I hate olives… and salmon, and anchovies, and smoked fish, not a fan of spicy food either… I’ll stop there because the list is very long!

If you were on death row, what would your last meal be? A bottle of Chardonnay.
