Miann Britomart is opening its doors soon and we get the inside scoop on all things sweet, specially blended and secret…
If you’re going to indulge, you may as well do it properly and it just doesn’t get better than Miann. We chat to co-founder Brian Campbell about his new chocolate boutique which is set to satisfy your sweet tooth when it opens in early October.
How did Miann come about?
Roselle and I had been wanting to create something for ourselves for quite a while, after doing pop up dessert nights around the city at Merediths and Sidart as well as markets under the Sweet Cuisine banner. We got offered our Fort Street site and we haven’t looked back since. Nine months on and we’ll be opening our second store at Britomart soon.
What excites you about Miann Britomart?
I am excited to return to Britomart, it’s a special part of the city for its vibrancy and dining options. It’s great to be a part of the buzz, especially in such a beautiful heritage building – the Australis Nathan. Plus, I don’t think there is a better place to sit in the summer time than out the front of where Miann Britomart is going to be.
How does Miann Britomart differ from Miann Fort Street?
Our Britomart store will have a heavy emphasis on chocolate. Our friends at Valrhona are even making a special Miann blend of chocolate for us – an Australasian first.
Will there be any Miann Britomart specialties?
Our hot chocolate menu is going to be pretty epic…
What is your favourite part of the chocolate making process?
Making our bonbons. There are no limits with the flavours and the design. We love coming up with something new.
What is your favourite flavour combination?
Dark chocolate, pink grapefruit and raspberry.
If you weren’t a chef, what else would you be doing?
I always wanted to have a job where I could be creative and make things with my hands – maybe a builder, architect or something along those lines. Either that or a professional snowboarder…
If you were on death row, what would your last meal be?
Anything cooked by Curtis Duffy from Grace in Chicago.
Favourite Britomart spot?
For dining it would be a toss up between Oaken for lunch or Cafe Hanoi for dinner. Roselle and I also love hanging out at Takutai Square in summer.
